..... as I devoured another piece of this sesame crusted brown butter banana bread this morning that was fried in butter and topped with salt (ps... the only way) I realized I should probably should just eat the entire thing, and share this recipe with you. You’re welcome and I love you.

SESAME CRUSTED BROWN BUTTER BANANA BREAD 

MAKES

1 loaf 

INGREDIENTS 

(150g) 1 cup of all-purpose flour 

(60g) ½ cup of sugar (+1 teaspoon for topping)

1 teaspoon baking soda

¼ teaspoon of salt 

(112g) ½ cup (1 stick) of butter, unsalted 

(260g) 2-3 very ripe bananas, mashed (1 1/2 cups when mashed)

1 large egg, lightly beaten

2 teaspoons vanilla extract

3-4 tablespoons of sesame seeds 

METHOD 

Pre-heat the oven to 350F / 175C. Grease a loaf pan with butter. Alternatively, you can use a square 5x5” pan (as seen above).

In a large mixing bowl, stir to combine the flour, sugar, baking soda, and salt. 

Brown the butter. Heat a pan over medium heat, and add the butter. Melt the butter until it starts to bubble and then keep an eye on it, swirling it every so often until it starts to turn golden brown, about 3-4 minutes. Add the mashed banana to the pan and stir to combine it with the butter. Cook it for another minute or so and then pour the browned butter banana mixture into the mixing bowl with dry ingredients and stir to incorporate. 

Then, add the egg and vanilla and stir to combine. Pour the batter into the greased loaf pan, and sprinkle the sesame seeds evenly on top, and the remaining teaspoon of sugar. Bake for 50mins - 1hr, until a cake tester comes clean when inserted into thecenter. Let it cool in the pan for 5-10 minutes before removing it from the pan, or you can leave it in the pan. This is best enjoyed fried until golden brown in some butter and topped with crunchy salt.
